This is a handmade mold for “kouglof,” a traditional pastry from the Alsace region.
Each piece is carefully handmade by artisans in Soufflenheim.
Kouglof is also known for being a favorite of Queen Marie Antoinette, the wife of King Louis XVI.
Ceramic kouglof molds distribute heat more evenly than metal ones, resulting in a “fluffy” and “moist” bake.
